Monday is often Roasted Chicken night at our house. Tonight I prepared roasted chicken with broccoli rabe. I brined the chicken for about 24 hours in a salt and sugar solution and let the chicken rest uncovered in the refrigerator for about 4 hours before cooking. Cooking was simple. I started with a spice rub and then put the chicken into a 375 degree oven. I turned the chicken over at 20, 40 and 60 minutes and let it cook for about another 10 minutes until the temp was about 150 degrees. I let the chicken rest for about 10 minutes before slicing.
As for the greens, I blanched them in boiling water for about 2 minutes then let them strain in a colander while I sautéed some fresh chopped garlic in olive oil. I then added the rate along with salt and pepper and cooked until tender. Delicious.
